More griping about MMA

Anyway, I had been thinking about the whole weight cutting thing in MMA. I was familiar with the process to an extent, but something about the whole thing was bothering me (mainly because I'm a fairly good judge of weight going by height and body type and I found it unlikely that certain fighters could be a certain weights) so I had to further investigate.
I came across this excellent article which explains things in greater detail. I had no idea that one could lose up to 30 pounds just from dehydrating/water weight alone. That just kinda blows me away a bit. I had always been led to believe from watching various programs about MMA that the weight cutting process was a combination of losing body fat and then dehydrating at the last minute to lose the last bit of weight. I had no idea just how much water weight was lost and how much could be put back on in 24 hours.
Like someone in comments said, it's almost like cheating. I know they all do it, but still. I'd like to know what fighters' exact weights are just before they get into the ring. Obviously the heavier fighter is going to have that advantage.
