Sichuan Eggplant


I had a couple small eggplants hanging out in the fridge for a while so instead of letting them sit in there until they went bad, I decided that I'd make some Sichuan eggplant. It's a fairly easy recipe and I have all the ingredients on hand since Chinese food is one of my favorites.

I just cut up the eggplants into small cubes and then saute them with a little oil in a large saucepan. Once the eggplant is soft, I then add about two stalks of scallions finely chopped, a few rehydrated red chili peppers finely chopped, a couple cloves of garlic(minced), a little less than a tablespoon of red chili paste, a tiny bit of minced fresh ginger, a drizzle of sesame oil and two tablespoons corn starch dissolved in two tablespoons of water. Then I mix it all up and let it cook for a few minutes longer then take it off the fire.

It turned out really well. The original recipe that I had called for a full tablespoon of red chili paste but that is some pretty powerful stuff! The bit that I used had my snot flowing like a stream. It was pretty spicy but not 'blow the top of your head off' spicy. The only problem is going to be the "goes in hot, comes out hot" principle. LOL Going to the bathroom in the morning should be an adventure!

Gosh, I do hope you removed the seeds? Apparently they're the hottest part.

What did you have for proteins?

I do hope you removed the seeds? Nope. They were itty bitty dried peppers. I just chucked it all in. I forgot to include a tablespoon of soy sauce and a tablespoon of rice vinegar as seasoning. What did you have for proteins? I had some salmon for lunch but I went most vegetarian yesterday. BTW Sichuan Eggplant ;) Yeah, that damn "L" key again. Blogger has spellchecker but somehow I didn't notice the "title" section. :/

Meh, happens to the best of us. ;)

I have to say, your blog entries are looking better and better. Not that there was really ever anything to complain about.

I've been watching old-ish horror and scifi movies on Youtube the past week. Didn't know Youtube has those. My routine is to look at the Wikipedia pages that have the list of horror and scifi films for anything that looks like it could be fun and then check whether Youtube has it.

So are there any good horror/scifi flix? Recently the Chiller channel had a commercial saying that they were going to be airing the Dead Like Me series. That one was really good IMO.

IDK really, I'm not exactly a copy editor or something. I guess it sort of feels like they're nicely structured.

You know what? I never actually read most of your early blog entries from 2006 and onward. I'm gonna have to read them all now.

Not really. Most of them are B or C level movies. I saw Dark City yesterday which was okay. Some of the Japanese horror flics are interesting to watch.

the Dead Like Me series. That one was really good IMO.

I loved that show. I saw the movie too.

feels like they're nicely structured. Thanks! I'm just writing what I feel. Since I've been posting more frequently I guess I'm getting better at it.

2006 and onward. I'm gonna have to read them all now. That shouldn't take long. I didn't post much back then.

I loved that show. I saw the movie too. YAY!!! A Dead Like Me fan! :::insert big cheesy grin::: :D
